Greetings, Y'all

I managed to cut out the end forms for my Night Heron project. Progress has been slow due to illness. Having spent the last three days cooped up at home, I got antsy in my pantsy and couldn't sit (or lay down) any longer so I went into the garage and started cutting. I am gonna try to start setting the forms onto the internal strong back I built for the project some time today. I have one question. I am thinking to produce a white kayak using pine or spruce or something else that will contrast with the colors of my inlay woods, which will be made from cedar, mahogany and other red/brown/blue reflecting woods. Any idea which wood type would give me the whitest or at least closest to white appearance without sacrificing structural integrity?
