I would avoid pine, it will turn yellow, then orangey as it ages. It's quite attractive, but not if you want white.
I'd say basswood is your first choice. It stays white, and has virtually no grain, so it's good for color. It's also much lighter than pine, if that matters to you. After that- aspen, or maple, knowing that maple will turn yellow, although not as much as pine. If you want just a thin line, holly is the ultimate white wood.
