The solution should work.
I like using a roller, but you can't "paint" the surface with epoxy like you'd paint a wall, you'll generate microbubbles that are very difficult to get rid of, likely what you have on your boat. You should think of spreading the epoxy with a roller more like pushing it around with the roller, there is no back and forth motion, that creates the bubbles.
