The way to make that technique work is to rest the paddle across the back of the cockpit rim and hook your thumbs over the paddle and your fingers under the cockpit. Rest the paddle blade on the bank or on the bottom and keep a bit of weight leaning to that side. You can do that with the kayak leaning over at quite an angle if there is no bank. You don't need any sense of balance at all to use that technique.

On the other hand if you do have a sense of balance you can use the technique in knee deep water using just the flat blade in the water to stabilize the kayak.

The same technique works for getting in and out.
