Personally, if you elect to add additional coatings to the interior of your boat, I'd recommend not using a paint. Varnish makes sense, if you decide to do anything.

The issue with the paint is that it masks the wood. A few years back, I was paddling in the San Juans and bottomed on a submerged bolder with a fully loaded boat. From the outside the boat looked fine, but because the interior had a brite finish I was able to see a series of hairline fractures which I subsequently fixed. If I had painted the interior, I never would have been able to see the damage.
