: I'm new to the kayaking experience, and entertaining the idea of

It is probably best to try a few commercial kayaks to get a feel for what you like, then build something similar. You want to try a few length/width combinations. You want to decide if you will be paddling on flat lake water, wavy ocean water, or white water. Is it windy where you paddle? Do you day paddle, or do you need to bring water, food and camping gear?
Once you know the answer to a few of these questions, you will have a better idea of what kind of kayak you really want.
