That is something to consider.

But since the sail boats are exposed to UV don't they have a final coating over the epoxy?

So, are they nude sailing or wearing those "Speedo" tiny bathing suits? How can they have much skin contact?

I would think if the epoxy has more time to cure it wouldn't be an issue.

It's aways something.
