I think I'd take this re-design over to Ross Leidy's site (kayakfoundry.com) and run it thru his excellent software and get an idea of how it might work out first, heck of alot cheaper to fix the design before you start building than after.

Also sounds like an interesting project, keep us in the loop when you're building, I'm very much interested.
