I think any full color will necessarily hide the grain as a color variation; the only way to have grain then is if it is left somewhat raised.

I have some antique (Victorian) wood items that have a finish that is probably India Ink and Shellac. The grain is virtually invisible, they probably used a grain filler, and the resultant appearance looks like not quite shiny black plastic, with the joints still barely visible after 125 years or so of aging. Of course, the Victorians never wanted to see too much natural finish and probably loved this effect because it reminded them of the ebony that they couldn't afford.
