You'd have to steam the wood unless it was ripped VERY thin to make the bends and WRC doesn't steam, so unless you want to laminate the coaming from really thin strips using cedar won't work real well.
Coaming riser is normally about 3/4" high with a 3/4" lip, with a bent coaming that lip will usually be smaller.
