I enlarged a stacked plywood cockpit coaming aft on one of my S&G kayaks. It was quite easy to just knock the coaming off the deck with a chisel. This allowed me to enlarge the cockpit to the aft without moving or enlarging the front half, when I made and attached the new coaming. The deck glass should have been applied before the coaming went on so there should be a hard layer to chisel down to.
