A 25 to 27 inch beam will pose no real problems when skinning, but could be difficult when when building, depending on the wood used. I have built two boats (one kayak, one canoe) at those widths and felt that the wood was pretty highly stressed, but have had no problems with them in use.

You don't need to go that wide to gat the displacement you are after. You might check out the F1 - http://www.capefalconkayak.com/f1.html - less width, proven performance, and nice drawings/info to work from. You would need to create your own cross sections since the design is intended to be built in the traditional manner, but others have done the "Yost-style" construction with success. If you are proficient with most any CAD software, you should have no issues with creating cross sections. Just don't try to over think it (speaking from personal exterience here). Study the style of construction before you cut any wood and have fun!
