Just yesterday I painted on some epoxy on a hatch edge where I noticed water infiltration. I think what often happens is that during the sanding for varnishing over the years, it's easy to expose some wood where the sharp edge is. I think the sharp edge is more the culprit than lack of protection on the surface of the cutout. I also think in the desire to have hatches that are a pencil line thickness between the cover and cutout allows friction to occur taking them on and off. All it takes is a pinhole to start the deterioration process. On my boat, the water mark is never going away. Wether you try to glass the edge or not, I believe a pretty strong rounded slope will solve a lot of problems. Mine are a fairly strong corner edge.
