I would not leave the inside unglassed. If unglassed, it will be too subject to denting on the inside of the deck, thereby exposing the cedar by breaking the seal coat of epoxy. Also, the rigidity and strength of the deck is very dependent on there being glass on both sides of the cedar core. Leaving out the inside glass will make it far more subject to damage from minor impacts when being loaded or paddled.

I vote for replacing your ropes with notched spreader sticks. They should hold the hull in shape just fine, and allow you to glass the inside to avoid the fragility of an unglassed underdeck.
