Paul Helbert converted one of my Chuckanut 15's into a capable sail boat. It sails upwind and down with little fuss - and would do even better (i.e. be more responsive) if he added a rudder and a "real" sail.
His sail rig is a slightly modified version of Michael Storer's "Drop-in" sailrig, with a leeboard that is mounted on a pivot that is clamped across the top of the cockpit (notice that he cut down his coaming). His mast is stepped separately, though, at the forward apex of the cockpit, and he actually has an even larger sail that he uses, as well.

I've sailed it, and no outriggers are necessary at all - though that's a function of hull shape. IIRC, you have a recreational kayak design, too, which could likely be modified to sail without outriggers, too.

You might also look around some of the archives here, as I think Tom Yost posted a pic of some of his SOF outriggers a while back.
