Check out Chris cunninghams book, "building a greenland kayak".

with the "greenland style" it's steam bent ribs and such, and it offers you all the possibilities for customisation you want.

for example i made one for my girlfriend using cunninghams method, but changing the design so it's only 3 meters long, but 60 cm wide, with a large cockpit.

also cunningham is very good at describing exactly how to do everything, and he loves funny little jigs that take longer to make than the time they save... :P
