You've already received info on the best books. The only other thing I can mention is to check out Brian Schultz's site, and maybe contact him concerning his builders classes. He has a couple of unique designs, and might be able to work with you to create something that does everything you need.

His blog posts are also very entertaining, while at the same time very educational.

I'll be starting my first kayak, a SOF ala Cunningham's book (with minor revisions from sources found all over the web), this fall.
