Either way, you will need some sort of UV protection for your epoxy. This means sanding the hull in prep for either varnish or paint and here is where you can fair the hull to get the sleekest surface. I would suspect that both paint and varnish could be buffed out to a very smooth surface after applicaton. Just remember, the smoother the surface prep, the smoother the final coat.
