I'm not familiar with the Coot so i couldn't form a judgement. However I had some success a few years ago sailing a plastic kayak without cutting a daggerboard slot. My solution was to use a Bruce Foil; there is information on the net. Briefly the BF is a sort of leeboard on an outrigger, it is canted to the vertical so that leeway causes it to develop an anti-heeling force. The pic is the very first proto - only 12 sq ft sail area, I don't seem to have a pic of a later model with a larger sail. The whole rig folded up on the foredeck.
