Problem is sanding uncured epoxy is potentially toxic and can most definately cause an allergic reaction, if you develop an allergy you won't be able to get near epoxy let alone use it anymore.

Can take a month or more for epoxy to fully cure, so you'll definately be sanding it uncured.
