Strip: Cove & Bead vs Bevel Edge

I am about to start my first strip built kayak project and have read hours and hours of instruction and some of it is contrary to each other.
I am thinking about beveling my edges vice cove & bead for the following reasons.

1. The Cove & Bead edges are very fragile and I don't have a router table and therefore would have to purchase more wood if broken.
2. I have read about "print through" if the C&B are not inset fully and this happens if the router cuts are not perfect.

Am I crazy or can I bevel the edges with a block plan and still get a fair, tight fit?
