Strength varies as the square of the depth, stiffness as the cube. So if you had a 1 x 2 section attached to the frame on the wide side and you turned it around so it was attached on its narrow side, from the side it would have x2 strength and x4 stiffness. In addition in a SOF the additional depth serves to keep the material off the frames.
