Carbon cloth is good for stuff that has to be hard and solid, like for example paddles, but a SoF kayak really should be flexible.
If you did make it with carbon you might be able to take the frame out afterwards with only a very minor loss of strength (see another thread from this week on this forum i think), but really.. it would be a waste to make a kayak with it I think :P
