I agree a 1/4" bit works fine with 3/16" strips. I used 1/4 inch strips on my first build and am currently using 3/16 on my new one. It really doesn't require any greater care in aligning the bit (I can express it more accurately by saying you need to take as much care aligning the bits for 1/4 inch strips) and the strips are easier to manipulate.

I used 1" boards because my lumber yard has some great, knot-free, long, 5/4 WRC decking but I imagine 3/4 would be easier to shape. BTW, the 6" (actual width = 5 1/2") X 18'board gave me 21 usable 3/16" strips which has covered ~90% of the hull and was a joy to use compared with the 10' lengths I had last year that required scarfing on each layer.
