I have built many boats from different companies, designers and have used many methods. I greatly prefer internal and external stems and use the method in my design manual. You may save time in not building them at the beginning of the process and choose to mate the strips at the ends, but unless you are experienced in this method, the time saving will be lost in the fitting the strips at the ends of the boat as you build and will likely not be as tidy. With the internal stem, you simply run strips past the ends of the boat, trim off later and at the end of building your hull, you shape and attach the outer stem. The outer is usually made of a laminated hardwood, which will give you much more impact resistance and make it much easier to get a tidy end. On kayaks, you can easily wrap bias cut strips of glass over the ends even with outer stems and if you use a lighter weight of cloth, it will be practically invisible. Just don't try to wrap the full cloth over the ends. That is a mess waiting to happen.

And IMHO, the weight added is negligible.
