Never mind on the last question. I just found an old copy of FreeShip and exported the offsets of one of my models. At some point the offset format was changed between DelftShip and FreeShip, and DelftShip no longer outputs the knuckle locations. I asked a question about it over at the Delftship forum.

Right now it seems like the easiest way to accomplish this from DelftShip is:

1. Model kayak.
2. Define station locations.
3. Add control curves to the stems.

Then:

1. Save As -> Version 2.6 file
2. Open in Freeship
3. File -> Export -> Offsets

The stems are defined in the curve offsets.

Unfortunately, you need the Pro version of Delftship to convert the file. If someone needs a hand at that conversion, I'd be more than happy to do one model for you.
