I know it is a different kind of stem, but the principal holds.
I bevel the keel strips amidships so that they but together properly.
The last four feet or so. Depending on the particular shape of the boat I just push together at the corners and tack down.
When the hull strips are all in place I then plane the ends of the keel strips flat and laminate the external keel in place.
If you let the two keel strips run out past the internal stems with just the twist that they need and not too much bending along their width you should find that it just works without much pain.
