Order one yard of cloth for every 3 feet in length your boat is. Of course you have 2 outsides and 2 insides to glass. So if your boat is 15 ft long you will need 20 yards of glass. I always order an extra yard to ensure I have enough without any splicing.
I would agree that 4oz is a good choice for a kayak.
I do about 5 coats of epoxy to get nice thick and smooth surface and end up with a lot dripping to the floor and sanded to dust but it takes me a full 3 gallon kit to make a 18 ft kayak.

Have fun and watch your tempertures to get a good wet out.
