How is the center of gravity of the paddler measured? From the bottom of the kayak or from some other place. The rounded hull should be able to take advantage of the fact that the center of gravity is lower because the draft of the boat is greater for the rounded hull. The difference in the draft is about an inch which is a lot in a stability calculation.

I assume the numbers on the left are a measure of the righting force.
