Hi Mike

Scarfing ply is easy enough. Ply scarfs are also stronger than you may think. I have unglassed scarfs on thirty year old boats that are still fine.

Four sheets of ply would be ample for a normal sea kayak.

One tends to have less waste with strips, so while the strip option may be more pricy at first sight there may not be that much difference in cost if you intend to glass the entire structure.

Ply does not bend across its width as well as strips so one needs to cut the shapes accordingly.

I would be inclined to chose the method that appeals most and go with that.

For me it would be strips.
