Glued strip boats most certainly work, they do though require sufficient glue area to make them strong enough. Not sure you can do that with a stripper's 3/16"-1/4" thick strips. Perhaps a bit thicker would work, I'd want to do a test panel or two and see. If the wood breaks when stressed then the glue area is ok, if the glue joints fail then you'll need thicker strips to make it work. The epoxy and the glass though do add considerable weight, so it might not be much if any heavier, it will likely though be more fragile as the epoxy glass also adds quite a bit of strength.
Shouldn't need more than a couple frames/bulkheads to keep it strong enough, no more than you'd need for hatches etc. anyway.
