Hi,
Test an out of the way part with paint stripper, if it lifts/softens, it's varnish. Epoxy won't soften with paint stripper.
Yes, 6oz will be heavy enough. Some would claim 4oz is enough but it depends on what usage you'll put it through. 4oz for light use on "safe" water, 6oz for more robust paddling.
