Hi Mike,
Don't think it's been mentioned yet in this thread, but not using epoxy is a great time to build a really nice lapstrake kayak. Would be really pretty, would take some serious time and might not be much if any heavier. With cedar planks and widely spaced oak or ash steam bent ribs would be plenty strong and no glue at all required.
