I've spent a large amount of time in wood canvas canoes and they most definately get heavier at the end of the season. The builders though mostly have gone to glass/epoxy in place of the canvas/filler/paint since it lasts so much longer. It's not a perfect solution though since it tends to trap moisture at the glass/wood interface which eventually leads to rot. Much unlike our strip kayaks where both sides are glassed, on those boats only the outside was.
