I used MDF for the stem and hacked it out with a gouge and a Dremel. This didn't remove it completely and there was a bit of thickened epoxy filleting before the inside glassfibre.
BTW I drew out the line of the gunwale and keel full size, and determined the shape of the cutwater/inner stem, the way it blends into the keel and curves slightly up to the ends. Not defined in the plans I bought a few years ago.
