Forget plywood strips.

I looked up Carpathians since I didn't know where it was and gat hits on loads of lumber suppliers.
If you have wood houses then you can make a stripper. Larger construction lumber will give you more sections with less or no knots.
I would not be afraid to use wood with small knots for the hull and try to scarf nicer clear wood for your deck.

Years back I was at a wood kayak gathering and a person had a strip kayak made from knotty pine and it was beautiful.
