If you were ripping strips from a good-sized plank, you could true up the edge (or face if it was narrow) of the plank with a jointer.
To do this accurately for a ski-length plank would require a long-bed jointer.

You cannot produce a board with parallel faces using a jointer. The usual procedure if starting with rough lumber would be to flatten one face of the plank with a jointer (which needs to be wider than the plank), and then put the plank through the thickness planer to get the second face parallel.

Trying to surface a 1/8" thick strip on a jointer would be exciting, I think.

As others have said, a good sawn surface is glue-ready for epoxy laminating. Or use your thickness sander setup on that thin stock.
