See if you can find an old used Coleman canoe for training. Wide, flat bottom. Get him used to being in a boat on water that way, and then graduate to your canoe, and from there to your Kayak... Could even start with a double with him in front and the lady in her own 'yak, then later bring all into a single boat.

Or even design a SOF single with a slightly aft cockpit and a second seating area fwd of your feet for training the dog.

Just a couple ideas to throw out there.
