Scott,
Having bulit 3 of Tom's boats; and being of similar hight and weight the best boat for you (imho) would be the sea tour 15 EXP.
make sure it is the exp as it has a larger volume. Also bulid the float bags (dead easy and cheap)
I have bulit them (the boats) to tom's design with the exception of skinning them like corey (skinboats.org) does.
