Building a sof kayak is great fun. Tom has a great website and is very free with his advice. Take advantage of his expertise. I am a similar build to yourself and have built a 5 metre Sea Tourer. I made it slightly wider, without any ill effects.

As someone else said it is difficult to build only one.
