Good idea Mathias regarding SOF.
Default kayak for Kayakfoundary would suit for a sea kayak.
I'm a tech teacher and built a chesapeake 17 hybrid with students awhile back. I did it as an on going group project and it was worked on by junior students and senior students. if I was to do it again, I would do a full stripper. Reason being that at any given time, couple of students can be working on the boat. maximum participation compared to S&G hull which didn't require much student help.
