I often use latex house paint. It needs to be handled with care for the first couple of weeks but for a boat that is taken out of the water after each use it is fine. Semi-gloss looks the best IMHO but of course if you aim at paddling around in a piece of fine furniture there are better looking ways to finish a boat.
