That yellowing is nothing. If you take a Q-tip and rub some on wood next to a clear area, you will not see any difference with the thin amount needed for glassing. As far as the epoxy being good - no problem. Do a little test batch to make it hardens but I never heard of epoxy going bad with age.

Years back I used some West hardener that turned black from age. It still kicked off fine.

The varnish will quickly turn yellow anyhow and eventually light brown.
