It's a smart choice for that particular application, IMO.

It's funny how times change. When I built my first strip canoe, epoxy was the 'new thing' and you couldn't find many hobbyists who'd ever used it.
'Fiberglass work' meant polyester resin and catalyst, in those days (70s).
I suspect that nowadays many builders don't have any polyester resin products (Bondo, laminating resin, mat fabric, etc) around the shop at all.

To replicate that $15 can of Bondo with epoxy products would cost at least $50 for me.

And, as you say, you can get polyester to kick off quickly with a high catalyst ratio, even if the shop is on the cool (not cold) side.
With epoxy, I still haven't found a '5-minute' product that cures really hard.
