For strictly demonstration purposes a canopy wouldn't be hard to rig, but it would be hard to build one that didn't interfere in come way with your paddling stroke. The bigger problem, though, would be that it would act like a parachute on the water and it would push you all over the place. I can also see it being prone to capsize because of the canopy catching wind. Think of how an umbrella acts in the wind, only in this case instead of twisting in your hand it would be rigidly attached to the hull. If you were capsized, the canopy would interfere with your paddle while you tried to roll AND interfere with your ability to do a wet exit, potentially trapping you. Safety first-not a good idea.
