Hi Lance,
You may want to consider a single chine hull. That is much easer to "mass-produce" than the multi chine hull. If the paddler is young then 19" to 21" beam should work fine for easy water paddling. That makes a better rolling kayak as well. I would suggest the Sea Rider or the Roldarka and I also like the Disko Bay that Dave Gentry has on his web site.
