I would build a mix. A couple Sea Pups for the smaller paddlers and maybe a Sea Rider or another longer boat for the larger paddlers. If you want stable boats look towards a wider beam. My daughter is a roller and loves her Sea Rider. I kept is at a bare minimum width of 18". I would go with the standard 19" for new paddlers.
Remember these are kids. They will love anything that paddles. Having a mized fleet will give more variety and let them experience the possibilities. If you do happen to get a boy or two to paddle be sure to put them in the least stable boat so they can show off their wet exiting skills. :)
My daughter loves nothing more than to rescue a flipped over boy. :D
