Not much in the way of a cable or even chain will deter a really determined thief, if he has some undisturbed time to work on it, IMO.
However, I do lock my boats.
Keeping them outta sight is a good idea; I don't leave boats on the car unless going paddling, and I keep them all in sheds with solid walls (and doors).
Be sure to record the HIN#, take pictures, etc. I also 'glass in an 'owners label' inside my boats (one in a non-obvious location) - epoxy will saturate laser printer paper well, and I usually add a layer or 2 oz glass over the label.
An idea from Matt Broze (who maintains the stolen kayak database at http://www.marinerkayaks.com/mkhtml/stolendb.htm ) is to remove things like hatch covers and seats if practicable, since it reduces the saleability of the stolen boat, and may deter a thief. Apparently, stolen boats have been recovered when the thief contacted the builder for replacements. (!)
Posting pics of toys online is probably not a good idea - some good advice I took when I had a collection of guitars (since $old ;-) )
