Sometimes these things happen. Perhaps the Minwax has something to do with it - but I have never used it on a boat, so that is just a wild guess.
In any case, you can still shrink the skin, even with the coating on it. A heat gun works best - it need not be industrial strength. Just go back over the skin, patiently, and tighten things up again - it's easy. Don't heat an area for more than a couple of seconds - if you see it move, or smoke or bubble, move it away immediately!
Shrinking is good, bubbling is bad.
If you burn a hole in the skin, it can be patched, from the inside, with more fabric and epoxy. Use a stick to reach way up into the ends, if you must.
