With a few fill coats or even some thickened epoxy sleaves don't leak. If you are really worried you can fill them with water before you join the deck and hull. If they leak they will drip and then you can fix them.
Using sleaves also gives you the added extra of under deck anchors for hatch leashes and what-not.
